Sunblushed tomato, basil and garlic Bruschette
Home-made Sun blushed Tomato Brushette with garlic and olive oil
Ingredients
Packet of small, sweet cherry tomatoes
Large slice of bread for toasting (white cob or Ciabatta)
Olive Oil
Garlic
Fresh Basil
Parmesan Cheese
Method
To make the tomatoes: heat an oven to 220 degrees, half the tomatoes and toss in oil and a sprinkling of garlic, salt and pepper.
Place in the hot oven and then turn the oven off and leave overnight to slowly soften. Alternatively you can put the oven on the lowest heat and slowly dry the tomatoes. Mix the crushed garlic with a table spoon of olive oil and season with salt and pepper. Add the basil and spread the mixture on both sides of the bread (add more oil if needed) Toast the bread under a grill or char grill on a hot griddle pan.
Place tomatoes on top of the toasted bread and sprinkle with grated Parmesan cheese. Place under the grill to for a couple of minutes to melt the cheese.
